There is a Filipino restaurant in our area that makes amazing grilled pork and chicken skewers, as well as chicken adobo and garlic rice. The pork is addictive not only because of the sauce but because the skewers are perfectly grilled. This sauce is my attempt to get close to what they make.
There are some elements in this sauce that show up in most recipes for this style of sauce, such as banana ketchup, soy sauce, 7-Up and lots of garlic. The rest will largely depend on your tastes. If you like it sweeter, add more brown sugar or ketchup. I like my sauces not so sweet, so I use lemon seltzer instead of 7-Up and I use a smaller amount of dark brown sugar, which is reflected in this recipe. I like to serve these skewers with a simple garlic rice.
