15 oz Ricotta Cheese (Homemade is best!)
¾ Cup Unsalted Butter, softened plus 1 TB for greasing pan
1 ½ Cups Granulated Sugar
3 Each Large Eggs, room temperature
1 tsp Vanilla Bean Paste
1 Each Large Lemon, juiced and zested
½ tsp Kosher Salt
½ tsp Baking Soda
1 ½ Cups AP Flour, well sifted
¼ Cup Confectioners Sugar

Instructions

1) Pre-heat oven to 350f2) Prepare 9 inch spring form pan with butter and confectioners sugar (grease with butter and dust with sugar)3) Cream butter and sugar until JUST combined 4) Add in Ricotta, a dollup at a time. DON'T RUSH IT! Blend until light and fluffy 5-6 minutes5) Add eggs, 1 at a time, mixing well after each6) Add vanilla bean paste, lemon juice, and lemon zest. Stir with a large spoon or spatula DO NOT USE A MIXER7) Sift flour in 1/4 cup at a time and mix by hand until combined8) Pour in to prepared pan and bake for 45 minutes or until a tooth pick inserted in the center comes out clean9) Let cool 15 minutes, remove collar and base of pan, finish cooling on a rack10) Dust with confectioners sugar and serve
