1 Cup Strawberry Preserves (or Preserves of your choice)
¼ cup Confectioners Sugar
Whisk Eggs, add everything except the confectioners sugar and the preserves. . Whisk. Pour into parchment lined 8in square pan. Bake at 350 for about an hour. Let cool on stove (it deflates), then refrigerate for at least 2-3hrs so it gets nice & solid. Top with confectioners sugar (shake a small sieve of the sugar over the cake to distribute evenly) & fruit/preserves of choice.
