2 lbs Ricotta Cheese
3 Each Eggs
2 Cups Sugar (can adjust down to 1 cup)
1 tsp Vanilla Extract
1 Each Ready made graham cracker crust

Instructions

n large mixing bowl, add ricotta cheese and 3 eggs. Beat slowly so it doesn't go everywhere for 1 minute. Then turn up to full speed for 3 min. Then add sugar and vanilla extract. Beat it for a few minutes until you see the mixture double. Then pour mixture into your ready made graham cracker crust tin. Bake at 350f (or 170c) degrees for 40 min. Open oven to turn the tin around . You will see it still wobbly in the centre. It's ok. Keep baking for another 15 to 20 min more. You don't want to burn it. Take it out. You will notice it a bit wobbly in centre. That's ok. Let it cool right down for a few hours, then put in fridge overnight or a few hours so it sets. Top with your choice of toppings and serve!
